Polka Dot Muffins (egg free)

I was asked to make this by a friend, who had attempted to make them for her young son, but, since she's not a good chef, they turned out pretty badly.

Makes 8-12 (depending on muffin tin size)

What you'll need:
Large Bowl
Muffin Tin
Whisk or wooden spoon
Smaller bowls (for weighing)
Scales
Measuring Cups and Spoons

Ingredients:
140g Plain Flour
100g Caster Sugar
120ml Milk
40ml Vegetable Oil
1tsp Baking Powder
1/2tsp Baking Soda
1tsp Vanilla Essence
1/2cup 100&1000's

Instructions:
1. Preheat oven to 180C (350F)
2. Put all ingredients in a bowl and beat until smooth.
3. Fill Muffin tin two-thirds full.
4. Bake in oven for 15-25 minutes (depending on muffin tin size)
5. Allow to cool and then decorate if desired.

These are unattractive muffins. They kind of look like ANZAC biscuits from above. I'm not going to say anything about the burnt parts, because they were entirely my fault. I got distracted (making jelly!) and didn't hear the timer ding.

Some of them sort of collapsed in the middle. Which was sad, because I wasn't planning on icing them, but if I want to share them, I may have to.

The polka-dots didn't really show up. That may just be the brand I used, since my friend said the polka-dots looked really good in hers.

But, after all that, they are really nice muffins. They're sweet, easy and great with a cup of coffee. So, if you're just looking for something to throw in the oven for a quick snack, these are probably the sort of muffins you're looking for.

This is the official record of my love affair with food.

I have always loved to cook. I love the way it makes my kitchen smell, and the easiest way to get all my friends in one place is to send out a mass text saying I have cookies in the oven.

But, sadly, cooking dinner has started to become a chore for me. So, this is to help me renew my passion. I'm hoping to cook/bake something (at least) once a week, even if it's just a new chocolate chip cookie recipe. I'll post all the recipes here, along with pictures and my comments.

If you want to post a recipe to your own blog (or whatever), feel free! Don't worry crediting, since I probably didn't create the recipe anyway. I just ask that you don't use my photos, since the best part of a recipe is trying it!

Speaking of crediting, I will do my absolute best to credit every recipe at the end of the post. If it's from a website, I'll include a link, and if it's from a book, I'll give you a title and page number.

I will also have labels on all my posts (except for any that, like this one, don't actually include a recipe), so that if you're looking for a cupcake recipe, you don't have to scroll through all the other posts to find one.
